Low intervention wine made in partnership with Dirk Niepoort. The grapes used in the production of Manicómio Tinto 2019 were hand-picked and trodden by foot in a traditional press, with carbonic maceration and a month of infusion in the skins. The juice is naturally fermented with indigenous yeasts and without temperature control (wild fermentation) ending the alcoholic and malolactic fermentation. This red wine is unfiltered and may deposit over time.
