Herdade Do Cebolal Vinha Do Rossio White 2016 comes from a vineyard called Rossio because it is one of the oldest vines at Herdade do Cebolal, where they gathered all their DNA developed in recent decades. Bunches are selected and picked manually. The must was in contact with the skins for 5 days. Alcoholic fermentation was carried out with indigenous yeasts. During alcoholic fermentation, the must undergoes bâttonage and is usually aged in a vat for 24 months, and can naturally carry out malolactic fermentation due to its low sulfur content and because it is in contact with fine lees and some thick lees.
White wine with a very intense and fresh flavor and a very persistent finish.
